Submarine Sammich

Yum, yum, and more yum.   I have fond memories of my parents laying out all the ingredients and everyone could build their own submarine sammich (that's what we call them in our house). Of course, my memories were seeing how much bologna, salami, ham, cheddar, mozzarella and Swiss I could pile on before it couldn't close anymore.  I wanted to recreate this comfort food for my own family.  You can put anything you want on your sandwich, but here are some inspiration ingredients you can lay out for piling!  Remember - base always needs to be a really good soft french bread with pizza sauce.  When you are done "piling", wrap in tin foil and cook at 350 for about 15 minutes or until cheese is melted.  As you can see from the photo below, not much has changed with me.  I just went straight for the meat and cheese.  This time around it's all plant- based.  Enjoy!

 - soft french bread (I pull a little bit of the dough out and eat plain while I pile my sammich.  That way it's not too much bread on sammich!)
 - pizza sauce
 - Tofurky bologna, smoked deli slices, ham, pepperoni, roast beef style - variety is more fun!
thinly cut pieces of Field Roast Apple Sausage
 - Chao Cheese.  and tons of it!
​ - nutritional yeast flakes
 - sliced olives
 - chopped onions
 - artichoke hearts
 - sliced tomatoes
 - spinach
 - grilled peppers
 - banana peppers
 - jalapeno peppers

5th Annual Healthy Lunchtime Challenge

Parents, welcome to the 5th Annual Healthy Lunchtime Challenge!
I have been a Community Leader for the Let's Move Initiative for 3 years now, and I am SO excited for this challenge!!


Do you have a child between the ages of 8-12? Can you imagine his or her recipe being featured in a cookbook? Would the two of you like to represent your home state or territory at a Kids’ “State Dinner” at the White House this summer?

First Lady Michelle Obama, WGBH Boston, the U.S. Department of Education, and the U.S. Department of Agriculture invite you to enter your child’s healthy MyPlate inspired recipe between February 22 and April 4, 2016.

One winner from each of the 50 states, the District of Columbia, and U.S. territories (Puerto Rico, Guam, American Samoa, the U.S. Virgin Islands, and the Northern Mariana Islands) will be chosen; and the prize is priceless! The winning chefs will serve as healthy food ambassadors for their state or territory and will be flown to Washington D.C. with a parent or guardian to attend the Kids’ “State Dinner,” hosted by Mrs. Obama at the White House this summer!

In order to be eligible, your child, with the help and support of an adult, must create and submit a lunch recipe that follows the MyPlate nutrition guidelines: Fruits and vegetables should make up about half of the recipe or dish, and it should also include whole grains, lean protein and low-fat dairy. This year, in celebration of the MyPlate, MyState initiative, we’re encouraging entries to include local ingredients grown in your state, territory, or community.

Submissions must include information about how and why the recipe was created. The recipe also should be:
  • Healthy
  • Creative
  • Affordable
  • Delicious
  • Original
A parent or legal guardian is required to fill out the entry form on his or her child's behalf.

Egg free, dairy free pancakes

Valentine’s Day can be a fun opportunity to show your child how food can be fun! Knowing my son is allergic to eggs, I took the whole pancake business into my own hands and came up with this healthy recipe! My boys don't even bother with butter and syrup - they just like to roll up their pancakes and eat them as "fruit logs". 


EGG-FREE DAIRY FREE PANCAKE RECIPE

Ingredients
1 cup whole wheat flour
1 1/2 Tablespoons baking powder
1/4 teaspoon salt
1 cup soy or almond milk
1/2 applesauce

Mix flour, baking powder, and salt together in a medium mixing bowl. Add the milk and applesauce; mix well. Pour batter into a heart shaped cookie cutter on a greased griddle or skillet. Flip when they start to bubble slightly on the top.  Let your kids decorate their pancakes with yummy toppings like strawberries and blueberries!

Great Egg Substitutes for Baking

My favorite baking substitute that I use all the time: 1 tablespoon chia seeds and 2 tablespoons water and sit for 5 minutes = 1 egg. I hope that you can find some of these also useful!​
